The Best Low-Fat, No-Sugar Greek Yogurt Pancakes

The discovery of these pancakes changed my life. They are so much yummier than your average buttery American pancakes because they're so light and fluffy but only require 5 ingredients!

Ingredients (enough for 1 person)

1 egg
1/2 cup plain flour
1tsp baking powder
1/3 cup Greek yogurt (I used Total 0% for a fat-free pancake)
2-4tbsp milk
1tsp vanilla extract (opt.)


Whisk the egg and yogurt together in a small bowl until smooth.

Add the flour and baking powder and again, whisk until smooth.

Add the milk and vanilla until the mixture reaches the consistency of thick custard.

Spray a pan on medium heat with light cooking spray/butter and place a 3-4inch diameter circle of batter into the pan. Flip after around 2 minutes (or until bubbles begin to appear on the surface), then cook on the other side for 1-2 minutes until golden brown.

Serve with fresh fruit or Nutella or honey, or whatever you fancy!
